Differentiated emulsifying agent based on the Double Gel Network technology that provides the structuring of the lipid and water phase with a high level of vegetalization. It allows the reduction of ingredients and can take up to 10% of oil load. It allows the development of different textures from viscous to fluid and provides a light and aqueous sensorial and a velvety residual film. Suitable for cold and hot processes and it can also be used as a sensorial modifier or viscosity adjuster.
